As a special treat and surprise I love preparing this healthful dish for my wife and over night guests. I add two slices of buttered gluten free bread and and big spoonful of grits (no GMO). If you like breakfast meats you can find a wonderful selection of gluten free sausages from Applegate.
1 Ripe Haas Avocado (cut in half and seeded)
2 Organic pastured farm eggs
1/2 tsp organic Mexican Seasoning or equal parts organic cumin powder, garlic powder, oregano, and chili powder
1/4 cup shredded organic cheddar cheese
Organic gluten free salsa
Fine sea salt and organic cracked black pepper taste
Pre-heat oven to 425. Place the avocado halves into a baking dish and stabilize them with a little foil if needed. Put 1/4 pat of butter in avocado then a little salt & pepper. Crack one egg into each empty pit of your avocado halves. Scoop out a bit of avocado if you feel you need a little more room.
Season the egg with a bit of salt and pepper. Sprinkle 1/4 tsp of Mexican Seasoning on each egg filled avocado. Top each half with shredded cheese and bake for 10-15 minutes. Remove from the oven, top with salsa and enjoy.
