This is a wonderful, gluten free, sugar free, dairy free recipe for Banana Muffins. It is very easy and takes no time at all. How easy is it.... well my loving wife, who does not cook, surprised me the other day with a batch of these delicious morsils........ So let's get busy.
3 Bananas...... very ripe
1/4 cup coconut flour
1/4 cup honey
1/4 cup coconut oil (or butter if you are not super strict about dairy)
1/4 tsp gluten free baking powder (yes.... baking powder has gluten)
1/4 tsp sea salt
1/3 cup goji berries
3 large eggs
1/2 tsp organic vanilla extract
Mouth Watering Options: Add 1/2 cup of shredded, organic, unsweetened coconut (for baking)
Preheat your oven now to 375
Mash the bananas and add to a bowl. Stir in the eggs, coconut oil/butter, honey and vanilla extract.
Sieve the coconut flour and baking powder into a separate bowl, add the salt.
Gradually stir the we ingredients into the dry. Fold the goji berries and shredded coconut (if you are adding that) into the batter. Transfer into a muffin tray, using a large tbspls worth for each muffin. The mixture makes about 8 muffins.
Bake for 15-20 minutes
